Lavender cookies … so simple and delicious and one of my favourites… so easy to make with the delicate taste of lavender with the added health benefits that lavender offers. Lavender is a calmative, anti-inflammatory and antiseptic – so many great properties from this beautiful flower.
I have at last got around to posting the recipe after making them a few times on workshops, and them going down a treat.
I always bake with gluten free ingredients, but just substitute with normal plain flour if you don’t have gluten free.
115g of softened butter, 225g of Demerara sugar, 1 egg, 75g of gluten free plain flour, 1/2 tsp of gluten free bicarb of soda, a pinch of salt, 175g of rolled gluten free oats, 30g of dried lavender flowers (get in touch if you would like some, I have lots. However, if you have some in your garden, pick, let them dry for a week or so and then take them off their stems. the fresher they are the more delicious the flavour!)
-Preheat the oven to 190oC
-Cream together the butter and sugar until fluffy, and then whisk in the egg
-Sift in flour, bicarb of soda, oats and lavender flowers and mix well with a wooden spoon…
-Roll mixture into 18 walnut sized balls and place well apart on baking tray, bake for 15 minutes or until they’re golden brown, or use a heart cookie cutter like I have with the ones in the photograph.
They are a great talking point in parties and gatherings as they are so unusual. Other great scents and flowers that can be added to baking range from other unusual one such as rose and geranium to others we will all have tried at some point such as lemon, orange and rosemary Allow them to cool and enjoy!!
